Elizabeth's delicious date and honey bars

Elizabeth, an old friend and customer of Wayside Organics, made us these delicious cakes. She was persuaded to part with the recipe so that we could share it with you.

Elizabeth's date and honey bars

Makes 18 bars (approx)

175g (6oz) dates, stoned and chopped

45ml (3tbsp) set honey

30ml (2tbsp)strained lemon juice

10ml (2tsp) plain flour

125g (4oz) self-raising flour

125g (4oz) demerara sugar

150g (rolled oats)

175g (6oz) melted butter

Method

Butter a 2.5 (1in) deep 18cm (7in) square tin and line the bottom

Put the dates, lemon juice, plain flour and 120ml (8tbsp) water in a pan. Bring slowly to the boil, stirring the mixture. Cook gently for 3-4 minutes. Turn out and cool.

Mix the self-raising flour, sugar, oats and melted butter together. Spread half of this mixture over the base of the tin, pressing down well.

Spread the date mixture over the top and cover with the remaining oat mixture, pressing evenly all over.

Bake at 190°C/375°F/gas mark 5 for 25 minutes until golden.

Cool for 30 minutes and cut into bars.

If there are any left store them in an airtight tin.
